Mom’s Priority Freezer Meals

We love freezer meals!!  By spending dedicated time once per quarter in the kitchen, we can have meals ready to go- for company, for busy weeknights, or when we’re just too plain tired to contemplate “what’s for dinner?”  Also, by preparing multiple meals while the ingredients are on sale, you can save money!  Having a healthy meal waiting in the freezer is such a wonderful thing, Mom’s Priority wants to share our favorites!   Here’s a favorite:

Mother’s Day is May 10th!

Mother’s Day is May 10th, and there are hopefully one or more “moms” or “grandmas” in your life that you want to show appreciation to.  The good news is it’s still 2 weeks away, so you still have time to find that perfect gift.  While many moms prefer quality time or just doing something nice for them to show your appreciation, gifts are what others would like.  I’ve linked ideas onto Mom’s Priority’s pinterest page, and here are more to help you out:

Teacher Appreciation Week is May 4-8

Gifts for teachers vary from simple to elaborate homemade to simply purchased, with a range of costs, but the most important thing is letting teachers know they are appreciated.  Check out Mom’s Priority’s Pinterest board for a variety of ideas, and thank those teachers!!

For the purchased route, gift cards are always appreciated, and Amazon gift cards are good for most anything!

For the semi-homemade route, go to Tagxedo and make a word cloud with your teacher’s name, the grade and any other words that fit your theme.  Put it in a simple frame and hang with ribbon!

About once per quarter, I buy chicken breasts and ground beef in bulk (when they’re on sale), and make up meals to store in our freezer for busy weeknights.  Recently, I made 2 Baked Zitis and 1 Lasagna.  Sometimes, I make up chicken enchiladas, tex-mex chicken, and poppyseed chicken.  I use disposable pans from the dollar store to minimize clean-up and so I’m not using all of my dishes in the freezer.  I label them with the name and date, so I know what’s in there.  It makes life SOO much easier during busy times of the year.  Knowing that I have a real meal waiting in the freezer keeps us from eating out all the time, helps us stay on budget, and is just comforting!

If I have leftover ground beef, I might also make up chili or go ahead and season and cook the ground beef and then freeze in a Ziploc freezer bag (with the date and title) to mix with spaghetti sauce for a quick spaghetti night later on.

For the chicken, the easiest thing to do is to put chicken breasts in the crock pot with a jar of salsa emptied on top.  Let that slow cook all day, and then you have great pull-apart meat for your chicken enchiladas and also for any other Mexican dish you might have.  You can freeze the chicken meat in a Ziploc bag in good portion sizes for your family with the name and date on the bag.
